Discuss  art with your hostess ~ she's looking forward to it!  Domaine des Castelles, a cozy retreat in the département of the Aude in Languedoc-Roussillon, awaits guests who want a pleasant homey atmosphere.  Madame Isabelle Clayette welcomes you as a bed and breakfast guest or offers you her gîte for longer, self-catering stays.

Cheerful breakfast roomThe rich colors of southern France are all around you ~ from the crisp blue sky and rich greens of the gardens, to the warm ochres, tangerines and berry colors of the walls.   Domaine des Castelles is a comfortable and pleasant destination in a most beautiful and authentic part of France.

Madame will be happy to tell you about all the wonderful sights nearby to fill your days, such as the Canal du Midi, the walled medieval city of Carcassonne, the Mediterranean coast, and the numerous Cathar castles such as Peyrepertuse, Latours, Durfot, Arques, Villerouge-Termenes, Puivert, Montségur and more.

If you are interested in the up and coming wines of the region, there are vineyards and wineries to visit where Corbières, Limoux and organic wines can be sampled and purchased.  And, while you're out and about, don't miss the Abbaye de Fontfroide, the towns of Castelnaudary, Limoux, and Montréal.  Spend some time exploring the banks of the River Aude as well.

 THE GÎTE AND THE GARDEN AT DOMAINE DES CASTELLES

We found this region of France to be exceptionally calm and peaceful.  Towns and villages are interesting with less tourists than can be found farther east along the Mediterranean.  It is here that regional cuisine includes grilled sardines served on country bread, many pork dishes, duck and goose patés, and incredible braised bass stuffed with herbs and vegetables served with a Béarnaise sauce with terragon and flavored by Ricard pastis.  Or try the Petite Marmite, a wonderful dish of vegetables and seafood or the local variation of vegetables and meat or poultry cooked in one pot.  Although Madame does not offer dinner at Domaine des Castelles, she will be pleased to recommend fine restaurants close by for guests' dining pleasure.

Do consider this lovely vine-covered residence, a 19th century vigneron's home, the next time you visit lovely Languedoc-Roussillon.  Neither the house nor your hostess will disappoint you!
